12 Months to a Healthier You, February Focus plus Update

A healthier You for 2014

Have you been following along with the 12 Months to a Healthier You Challenge at Money Saving Mom. I started it in January to help keep me motivated to lose weight and help me establish so good healthy habits too. If you haven’t started, now is a great time to start.

How the Challenge Works

Each month of the challenge will focus on one area to improve on, to help improve your health. By focusing on one area each month, it should give me time to really get it set as a habit. So it won’t end up being something I just do for one month. But hopefully I will be able to continue the improvements for a long time.

This month’s focus is on eating more fresh fruits and vegetables. I needed to decide what I would commit to for this month. I decided on eating 4-5 servings of fruits and vegetables a day.

I was going to pick eating salads each week but sometimes I just can’t find lettuce on sale. By picking to have 4-5 servings a day I think I should be able to find produce on sale. Helping me to keep up with the challenge and not break my budget.

My Progress for this week

This week went really well. I found a good deal on organic kale and lettuce. I also had some baby artichokes in the refrigerator from my shopping a week or so ago I forgot about. Along with some apples, bananas, oranges and grapes I found on sale.

I did need to use some broccoli from the freezer but I’m going to count frozen vegetables too since they are usually very close in nutrition to the fresh one. 🙂

Each day this week I ate 4 serving of fruits and vegetables. I made some Kale Chips, that were really good. Everyone ate some but my youngest.

We had the baby artichokes with dinner and pear slices one night. I am going to buy the baby artichokes when I see them on sale more often. I liked them so much better than the larger ones.

Tonight we will be having tacos for dinner. I think I might opt to have a taco salad to pack in a few more vegetables into that meal.

  1. I love your goal for this month, and the way you’re being creative with getting your fruits and veggies in. 🙂

    I want to join in this challenge, too. I’m committing to drinking juice at least three times a week.

    1. I have to get creative with veggies. They all taste bitter to me but I’m going to eat them anyway.

      Maybe getting those veggies into juice would help. I hope you are able to get your juicing in this week. 🙂
