Easy Dinner Idea, Twice Baked Taco Potatoes

Potato meets taco is how I would describe this easy to make dinner recipe. If you love tacos and twice baked potatoes, you'll love this recipe.

When I first found this recipe, I knew this would be one my family would really like. We like twice baked potatoes and we like tacos, so put them together and how could we not love this recipe.

If tacos and twice baked potatoes had a baby this would be eat. Creamy, cheesy and a little spicy all at the same time. It's also an easy dinner recipe to make.

I did change-up the recipe a little, as we didn’t have any dairy free sour cream. I used cream cheese instead of the sour cream. I also made it dairy free using the dairy-free cream cheese from Trader Joe’s and dairy free shredded cheese too.

But if you don’t need to eat dairy free, the regular cream cheese will work great too.

The results were very good, a creamy and slightly spicy potato. In fact, I made a double batch and we ended up eating all of them, except two.

They were a really big hit. We ate them as a main dish, but these potatoes would also make a really nice side dish also.

If you’ll be making them as the main dish be sure to make at least one potato per person. These potatoes were great served with a side salad and fruit to round out the meal.

 

This recipe is definitely a winner. It's easy to make and a family pleaser too.

To make a batch of the Twice Baked Taco Potatoes, it will cost $3.06 for the whole recipe, or $.77 per serving. Not bad at all for such a yummy recipe, that our family really loves.

Twice Baked Taco Potatoes

Ingredients
  

  • 4 Baked Potatoes
  • 2 T Butter or Margarine
  • 2 T Cream Cheese we use the Trader Joes dairy free
  • 2-4 T Soy milk or regular milk
  • 1 t Salt
  • 1/4 t Pepper
  • 1/2 pound Ground Beef browned and seasoned with taco seasoning
  • 1 1/2 Cup Shredded Cheese

Instructions
 

  • After baking potatoes either in the oven or microwave. Let them cool for about 10 minutes.
  • Then cut in half lengthwise and scoop out the potato leaving a small amount of potato near the skin.
  • Place the potato pulp into a bowl.
  • To the potato pulp add the cream cheese, margarine, salt, pepper and milk and mash until smooth. Add the seasoned ground beef and 1/2 cup shredded cheese. Mix well.
  • Once mixed well scoop the potato mixture into the potato shells and then top each potato with the cheese remaining.
  • Bake 375 degrees for 20-25 minutes.

I am sure these would do well as a freezer meal but we just didn’t have any leftover to freeze this time. 🙂

    I also noticed you purchase some of your food at Trader Joe’s? It’s such a great place! What do you like best there, Shelly? We love the nuts, great prices on organic produce, and overall high quality of food. 🙂

      I don’t live close to a Trader Joe’s, so I only shop there on occasion, but I do have a few favorite items, I buy each trip. The sunflower butter is a great price compared to other stores so I always pick some up. Goat and sheep cheese for my kids and husband. They can’t eat regular cheese and Trader Joe’s has the best price I can find on goat and sheep cheese, better than Costco. My family also likes the Cherry Chocolate Chip Soy Cream (ice cream). Their banana prices are good too. I thought it was more expensive until I weighed the bananas and found they were less per pound than I usually pay. 🙂 I also have purchased organic produce if I need something when I go. I agree Trader Joe’s has high quality food. Now if we only lived closer. 🙂

  2. Thanks for the reply, Shelly! I totally understand about Trader Joe’s being not so close. The closest one here is about 25 miles away; therefore, I go every other week usually. Yes, their bananas are a great price, and I seem never to get enough. 🙂 I am sorry that your kids and husband cannot eat regular cheese. May I ask why?

    1. My husband and kids were born with a milk allergy. They break out in hives if they eat milk. My husband outgrew it for a while but it came back. We have found they can tolerate sheep and goat cheese, so I’m so thankful that Trader Joe’s sells it.

  3. I love twice-baked potatoes! I will keep that meal in mind for when my husband is out of town as they sound like they would be a huge hit with the boys. He’s not a fan of cheese (not allergic just does not like it) so I keep recipes like this for when he’s not home for dinner.
